This Wisconsin cheese is semi-soft and gets its name NOT from its texture, but from the bricks that were traditionally placed at the top of curds to expel moisture. A milder firmer and decidedly less aromatic cousin to Limberger. An essential ingredient in a true Midwestern casserole or sliced with a baloney sandwich.
